Peter Misamore ~ Executive Chef
Chef Misamore graduated from the Culinary Academy 3rd in his class and went on to do his internship with The Kitchen, in Sacramento.
He is currently working with cooks at a local senior residence facility to improve the way the food is prepared and served while saving money for the facility and meeting the dietary needs of the residents.
His passion is clean fresh food and innovative creative ways of meeting the dietary challenges for seniors, disabled persons and diabetics. With so many restrictions on diets Chef Misamore believes food is more than just nourishment and he insists that carefully prepared food using the freshest ingredients will not only meet those restrictions but will allow the diner to enjoy meals that are nourishing and full of flavor. In an interview with the Chef, Peter Misamore said.
“By using the best food and incorporating fresh herbs and seasonings not only are my dishes good for you they pleasing to the palette and the eye. If a dish is prepared properly you don’t need to add extra salt, fat or sugar.” He added “Don’t get me wrong, butter is good, I like butter but I don’t have to use it to make the good flavorful dishes that you’ll love, but if you want the full flavor and mouth feel of true Southern/ French cuisine, I can do that too.”
Chef Misamore thought a catering company would be a way for the entire family to get together and share their passions for cooking and eating. Every one in the group has a specialty or talent that they bring to the company.
Genevieve Jaussaud ~ Chef and Baker
Chef Jaussaud has been cooking professionally for years. Her passion is Southern style cooking. Louisiana Cajun and Creole food are in her blood as well as in her kitchen.
“My grandmother came from Louisiana and she taught me how to cook. She raised us on wonderful southern/ French style dishes what every one now calls fusion but back then it was just food.” Genevieve said. She does most of the bread baking and assists the pastry chef in making the delectable desserts everyone loves.
Genevieve is the mother to this group of highly talented chefs, figuratively and actually, Peter and Shawna are her children. “I never thought I’d be working with my kids but this has been great and I get to play with the grandchildren everyday, we cook together.”
Ruben Hernandez ~ Sous Chef
Ruben brings another element to the company. He is Filipino and Mexican and his cooking style is eclectic and colorful. His dishes are a fusion of the two nationalities and cultures.
His passion is barbecue and grilling. He is known for cooking the best ribs and steak in the Sacramento area. When not on the grill Ruben is in the kitchen with the rest of the family whipping up sauces, cooking pasta and doing whatever is needed. Ruben is also the bartender. “I like to bartend, I like to talk to the guests and serving drinks is the best way to get people talking. Everybody likes a bartender.”
Jacqueline Jaussaud ~ Pastry Chef
Jacqueline is passionate about pastries, cookies, cakes and pies. She is content to measure ingredients, a laboriously bake and decorate cakes and to spend the time required to make the dessert look the way it is supposed to. “Baking is a science. You have to follow the recipe carefully and precisely in order for the end result to turn out perfectly.” Jacqueline says “Most Chefs do not enjoy the baking. They prefer to be creative and add ingredients as they like; I on the other hand enjoy the structure of baking.”
All our desserts from the simple chocolate chip cookie to the most elegant cake are prepared fresh just before the event to ensure only the freshness and quality.
And of course...
Shawna Hernandez ~ Event Coordinator/ Office Manager/ Chef
Shawna is the Jill of all trades in the company. She is the front end person, working with clients to schedule the events and assisting them select menu items, scheduling outside help, advertising and marketing, Shawna is also the bookkeeper and office manager.
When she has a free minute she is in the kitchen assisting where she is needed. Shawna is good at bread making, and cooking. Shawna works with the pastry chef and she is great at decorating and plating. She is the "go to girl" for every question for the company or the catering industry in general. Shawna rounds out her resume by filling in as bartender, food server, event set up and decorating.
